Menhaden (turkish Omelette)

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 9 eggs
  • 200 g onions, sliced
  • 1 bunch fresh parsley, chopped
  • 300 g green peppers, diced
  • 6 tomatoes, chopped
  • butter, to taste
  • salt, to taste

Recipe

  • 1 in a medium bowl, whisk eggs well.
  • 2 add salt and whisk again.
  • 3 in a frying pan, heat butter and saute the vegetables, except parsley, until almost done.
  • 4 add the eggs to the sauteed vegetables.
  • 5 add more salt if required.
  • 6 garnish with more parsley and serve hot.
