Red Curry Fried Rice

Ingredients
- Servings: 4
- 1 tablespoon red curry paste
- 1/4 cup fish sauce (to taste)
- 2 fresh lime leaves, thinly sliced
- 1/2 medium onion
- 8 ounces sliced fresh mushrooms
- 3 cups cooked jasmine rice
- 4 eggs
- scallions and fresh cilantro (to garnish)
Recipe
- 1 cook curry paste and lime leaves in a bit of vegetable oil until fragrant.
- 2 cook onions and mushrooms in vegetable oil in a wok until tender.
- 3 add rice, fish sauce, and curry paste mixture.
- 4 separately scramble eggs with dash of fish sauce and some water then add to rice mixture.
- 5 garnish with scallions and fresh cilantro as desired.
