Red Roast Lamb (char Siu)

Ingredients
- 4 lbs lamb butt, with some fat (shoulder)
- 1/4 cup dark soy sauce
- 1/4 cup hoisin sauce
- 1/4 cup ketchup
- 3 tablespoons dry sherry
- 2 minced garlic cloves
- 1 tablespoon salt
- 2 teaspoons five-spice powder
- 1/2 cup brown sugar
- red food coloring, few drops, if desired
Recipe
- 1 cut lamb lengthwise into long pieces, about 2 1/2 inches thick. in a medium bowl, combine soy sauce, hoisin sauce, ketchup, sherry, garlic, salt, 5 spice powder, and brown sugar. mix to blend well. add lamb and turn the meat to coat well. cover and refrigerate 6 hours. preheat oven to 350*. place lamb strips on a rack in a shallow roasting pan. roast in oven until lamb is cooked through and tender, about 45 minutes to 1 hour, turning often and basting every 15 minutes with marinade. discard any leftover marinade. for a tradional charred look, brown lamb briefly, under a preheated broiler. note: if using food color, add a few drops to marinade before adding lamb.
