Passover Yerushalmi Kugel

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 4 1/2 lbs potatoes
  • 4 eggs
  • 1 teaspoon oil
  • salt
  • 2 tablespoons oil

Recipe

  • 1 cooked the peeled potatoes until tender but not soft.
  • 2 drain and mash.
  • 3 add 4 eggs, 1 teaspoon of oil and a little salt.
  • 4 prepare a pot by spreading oil on sides and bottom.
  • 5 heat.
  • 6 when oil is hot, pour in the potato mixture.
  • 7 cook for at least 1/2 hour on top of stove on a small flame until the sides are browned and kugel has risen in bulk.
  • 8 cool until completely cold.
  • 9 turn over.
  • 10 bake on other side in same pot 1/4 to 1/2 hour.
