Sri Lankan Curry Powder ( Simple Version)

Ingredients

  • 1 ounce coriander seed
  • 1/2 ounce cumin seed
  • 1 tablespoon fennel seed
  • 1 teaspoon fenugreek seeds
  • 1 cinnamon stick
  • 6 green cardamoms
  • 6 cloves
  • 6 curry leaves
  • 1 teaspoon chili powder

Recipe

  • 1 in a heavy pan dry roast the first seven spices, stirring from time to time, to prevent burning. allow to cool. grind the spices with the curry leaves and chilli powder.
  • 2 store in air tight jars, it will keep for up to 6 months.
