Peanut Butter Chicken With Chile

Ingredients

- 12 pieces skinless chicken (legs and thighs work well)
- 2 tablespoons olive oil
- 2 medium onions, thinly sliced
- 2 cloves garlic, minced
- 1/2 cup natural-style peanut butter
- 1/2 teaspoon ground coriander
- 1 teaspoon red pepper flakes
- 1 (15 ounce) can tomato sauce
Recipe
- 1 preheat oven to 400 degrees.
- 2 arrange chicken in an oven proof baking dish.
- 3 in frying pan, fry onion and garlic in hot oil until limp.
- 4 add other ingredients and stir until well blended, pour over chicken, cover and bake for about 30 minutes.
- 5 remove cover and bake an additional 20 minutes or until chicken is done.
- 6 serve over brown rice.
