Peanut Butter Chicken With Chile

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • Servings: 6
  • 12 pieces skinless chicken (legs and thighs work well)
  • 2 tablespoons olive oil
  • 2 medium onions, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 cup natural-style peanut butter
  • 1/2 teaspoon ground coriander
  • 1 teaspoon red pepper flakes
  • 1 (15 ounce) can tomato sauce

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 arrange chicken in an oven proof baking dish.
  • 3 in frying pan, fry onion and garlic in hot oil until limp.
  • 4 add other ingredients and stir until well blended, pour over chicken, cover and bake for about 30 minutes.
  • 5 remove cover and bake an additional 20 minutes or until chicken is done.
