Mediterranean Tomato Pasta

Ingredients

- 2 1/4 cups dry penne pasta
- 450 g plum tomatoes
- 275 g mozzarella cheese
- 4 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- grated lemon rind
- 1 tablespoon lemon juice
- 15 fresh basil leaves, shredded
- salt & freshly ground black pepper
- fresh basil leaf, to garnish
Recipe
- 1 cook the pasta with some salt and olive oil.
- 2 quarter tomatoes and cheese into small cubes.
- 3 mix olive oil, vinegar, grated lemon, 1 tbsp of lemon juice, and the shredded basil leaves.
- 4 add to the above salt, pepper, and the tomatoes and cheese.
- 5 drain the pasta well, and pour over the above mixture. mix well and garnish with basil leaves.
- 6 you can add mediterranean black olives to the plate, it will only make the taste even better!
