Mediterranean Tomato Pasta

Ingredients

  • Servings: 4
  • 2 1/4 cups dry penne pasta
  • 450 g plum tomatoes
  • 275 g mozzarella cheese
  • 4 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • grated lemon rind
  • 1 tablespoon lemon juice
  • 15 fresh basil leaves, shredded
  • salt & freshly ground black pepper
  • fresh basil leaf, to garnish

Recipe

  • 1 cook the pasta with some salt and olive oil.
  • 2 quarter tomatoes and cheese into small cubes.
  • 3 mix olive oil, vinegar, grated lemon, 1 tbsp of lemon juice, and the shredded basil leaves.
  • 4 add to the above salt, pepper, and the tomatoes and cheese.
  • 5 drain the pasta well, and pour over the above mixture. mix well and garnish with basil leaves.
  • 6 you can add mediterranean black olives to the plate, it will only make the taste even better!
