Miso- Great Soup!

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 teaspoon instant dashi stock
  • 4 cups water
  • 4 tablespoons shiro miso
  • 1/4 cup dried wakame seaweed
  • 1/2 cup soft tofu, small dice
  • 2 scallions, sliced

Recipe

  • 1 heat up about 1 1/2 cups water to simmer for soaking the wakame.
  • 2 turn off and add dried wakame until soft and ready to add to soup.
  • 3 boil 4 cups water.
  • 4 when boiling add 1 tsp instant dashi.
  • 5 let boil for 2 minutes and add scallions and tofu.
  • 6 put 4 tblsp miso paste into small bowl or glass.
  • 7 add some of the dashi broth to make a "slurry" before adding to broth.
  • 8 add "slurry" to broth.
  • 9 let boil 1 minute & remove from heat.
  • 10 add soaked wakame to broth and pour mixture into serving bowl.
  • 11 enjoy!
