Spiced Lamb With Couscous

Ingredients

- 1 cup couscous
- 1 1/4 cups boiling chicken stock
- 2 tablespoons oil
- 2 onions, sliced
- 1 tablespoon thyme leaves
- 1 tablespoon ground cumin
- 1 teaspoon chili powder
- 1 tablespoon paprika
- 500 g lamb fillets
Recipe
- 1 for couscous----------------.
- 2 place couscous and boiling stock in a bowl.
- 3 cover with plastic wrap.
- 4 let stand for 5 minutes, or until all liquid is absorbed.
- 5 heat oil in a frying pan.
- 6 add onion and thyme, and cook until onion is well browned.
- 7 for lamb----------------------.
- 8 combine cumin, chilli and paprika, and toss with the lamb fillets, to coat.
- 9 heat another pan and cook lamb to own prference.
- 10 place couscous in pan with onion, and toss.
- 11 slice the lamb and serve on top of the couscous.
