G.l.o.p.

Ingredients

  • Servings: 4
  • 1/2 lb parmesan cheese (not too dry)
  • 1/2 lb asiago cheese
  • 2 tablespoons green onions, chopped (or use a mild onion and minced it)
  • 2 tablespoons garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon black pepper
  • 1 teaspoon crushed red pepper flakes (optional)
  • 1 1/2 cups extra virgin olive oil

Recipe

  • 1 remove rind from cheese and cut into 1-inch chunks.
  • 2 pulse cheese in a food processor until the size of fine pea gravel. (this was how the recipe was written. you want small pieces of cheese, like the size of nerds candy or maybe a little bigger.).
  • 3 place the cheese in a bowl and stir in onion and garlic.
  • 4 add oregano by rubbing it between your fingers to release the flavor.
  • 5 add black pepper and extra-virgin olive oil and mix well. (if using red pepper flakes, add them in this step.).
  • 6 cover and let stand 4 hours at room temperature.
  • 7 serve on crackers or rounds of bread.
