Roasted Red Bell Pepper Hummus (vegetarian)

Ingredients
- 1 (15 ounce) can navy beans, rinsed and drained
- 2 teaspoons fresh minced garlic (or to taste)
- 1/2 cup roasted red pepper, drained and chopped (can use more)
- 1/3 cup tahini
- 1/4 cup fresh lemon juice
- 1/4 teaspoon cumin
- 1/4 teaspoon coriander
- 1/4-1/2 teaspoon ground red pepper
- 2 tablespoons olive oil
- 1 teaspoon salt (or to taste)
- 1 tablespoon chopped fresh cilantro
Recipe
- 1 process all the ingredients except the olive oil and cilantro (start with 1 teaspoon salt) until smooth.
- 2 with the processor running pour the oil in through the chute in a slow steady stream; process until smooth.
- 3 season with more salt if desired and stir in the cilantro.
- 4 cover and chill for about 2 hours before serving.
