Roasted Red Bell Pepper Hummus (vegetarian)

Total Time: 2 hrs 5 mins Preparation Time: 5 mins Cook Time: 2 hrs

Ingredients

  • 1 (15 ounce) can navy beans, rinsed and drained
  • 2 teaspoons fresh minced garlic (or to taste)
  • 1/2 cup roasted red pepper, drained and chopped (can use more)
  • 1/3 cup tahini
  • 1/4 cup fresh lemon juice
  • 1/4 teaspoon cumin
  • 1/4 teaspoon coriander
  • 1/4-1/2 teaspoon ground red pepper
  • 2 tablespoons olive oil
  • 1 teaspoon salt (or to taste)
  • 1 tablespoon chopped fresh cilantro

Recipe

  • 1 process all the ingredients except the olive oil and cilantro (start with 1 teaspoon salt) until smooth.
  • 2 with the processor running pour the oil in through the chute in a slow steady stream; process until smooth.
  • 3 season with more salt if desired and stir in the cilantro.
  • 4 cover and chill for about 2 hours before serving.
