Spring Onion Pancakes

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 cup all-purpose flour
  • 1/2 cup rice flour
  • 3 eggs
  • 1 1/2 cups milk
  • 1 pinch salt
  • 1 tablespoon sesame oil
  • 4 spring onions, shredded (scallion)

Recipe

  • 1 whisk all ingredients except the onions in a bowl until smooth.
  • 2 stir in the spring onions.
  • 3 lightly coat a small frying pan with cooking spray.
  • 4 place over med-high heat.
  • 5 pour in the batter (amount depending on how big you want the pancakes to be) and swirl the pan to spread the mixture thinly.
  • 6 cook for 2 minutes each side or until lightly browned.
  • 7 keep pancakes warm while cooking the remainder.
  • 8 serving suggestions- hoisin chicken/lamb, char siu bbq lamb, peking duck.
