Low Fat Peanut Sauce

Ingredients

  • Servings: 3
  • 1/2 cup better n' peanut butter low-fat peanut butter
  • 1/2 cup hot water
  • 1 tablespoon cornstarch
  • 3 tablespoons soy sauce
  • 1 tablespoon pureed ginger
  • 1 tablespoon crushed garlic
  • 5 scallions, sliced
  • 5 sprigs fresh basil, chopped
  • 1/2 teaspoon cayenne

Recipe

  • 1 mix peanut butter with hot water in a small bowl until smooth.
  • 2 add spices, soy sauce and cornstarch and whisk to remove any lumps.
  • 3 steam-fry veggies of choice, and add the peanut sauce when stirfry is half done.
  • 4 bring to a boil, then reduce to a simmer until veggies are done and the sauce thickens.
  • 5 serve!
