Steamed Long Grain Rice With Coconut And Ginger

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 8
  • 2 cups long grain rice, rinsed
  • 1 (14 ounce) can coconut milk (can use reduced-fat)
  • 1 3/4 cups chicken stock or 1 3/4 cups water
  • 4 teaspoons gingerroot, minced
  • 1 teaspoon salt
  • 1 pinch pepper

Recipe

  • 1 in a pot with a tight-fitting lid combine all ingredients.
