Pineapple Beef Stif Fry

Ingredients

  • Servings: 2
  • 1/2-1 lb beef, strips
  • 1/2 cup pineapple tidbits
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons garlic, minced
  • 2 tablespoons ginger, minced
  • 2 teaspoons dry mustard
  • 3/4 teaspoon pepper
  • 1/2 cup mushroom, sliced
  • 1/4 cup tomato, diced
  • 3 green onions, sliced
  • 2 teaspoons cornstarch
  • additinal salt and pepper

Recipe

  • 1 salt and pepper beef strips and cook in pan coated with cooking spray on medium-high heat. remove from pan. *skip this step if using leftover cooked meat.
  • 2 add mushrooms and onions to pan and cook stirring occasionally until softened (5-6 minutes). add garlic and cook an additional 30 seconds.
  • 3 add remaining ingredients and stir together until heated through. allow the cornstarch to thicken the liquid to make a sauce. *add additional soy sauce if desired.
  • 4 serve with rice.
