Single Egg Foo Yong

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • 1/4 teaspoon sesame oil
  • 2 tablespoons celery, thinly sliced
  • 1/4 cup spinach, chopped
  • 2 tablespoons bean sprouts
  • 1 green onion, thinly sliced
  • 2 eggs
  • 1/8 teaspoon red pepper flakes
  • pepper
  • salt
  • 1/2 teaspoon molasses
  • 1/2 teaspoon peanut butter
  • 1 teaspoon soy sauce
  • 1/16 teaspoon garlic powder
  • 1/2 teaspoon cornstarch
  • 1/2 teaspoon rice vinegar
  • 1/8 teaspoon sweet 'n low
  • 1 tablespoon water

Recipe

  • 1 heat sesame oil and a light coat of cooking spray to medium heat.
  • 2 sauté celery until starting to turn translucent but not mushy (2-3 minutes?).
  • 3 add spinach, green onion, and sprouts.
  • 4 cook 1-2 minutes, until wilted.
  • 5 meanwhile, beat eggs, add garlic powder, pepper, pepper flakes and salt.
  • 6 add cooked veggies.
  • 7 spray pan.
  • 8 pour into pan and with spatula scrape egg that runs back to veggie, to make a 4-5 inch patty.
  • 9 cook 2-3 minutes until about half way cooked thru and flippable.
  • 10 flip and cook another couple minutes.
  • 11 while cooking egg patty, mix sauce ingredients in a microwaveable dish.
  • 12 cook for about 10- 20 seconds at a time, until it forms a honey-like consistency.
  • 13 add water or sugar of choice to reach desired consistency and desired mild sweetness.
  • 14 top the cooked egg patty with sauce and enjoy.
