Single Egg Foo Yong

Ingredients
- 1/4 teaspoon sesame oil
- 2 tablespoons celery, thinly sliced
- 1/4 cup spinach, chopped
- 2 tablespoons bean sprouts
- 1 green onion, thinly sliced
- 2 eggs
- 1/8 teaspoon red pepper flakes
- pepper
- salt
- 1/2 teaspoon molasses
- 1/2 teaspoon peanut butter
- 1 teaspoon soy sauce
- 1/16 teaspoon garlic powder
- 1/2 teaspoon cornstarch
- 1/2 teaspoon rice vinegar
- 1/8 teaspoon sweet 'n low
- 1 tablespoon water
Recipe
- 1 heat sesame oil and a light coat of cooking spray to medium heat.
- 2 sauté celery until starting to turn translucent but not mushy (2-3 minutes?).
- 3 add spinach, green onion, and sprouts.
- 4 cook 1-2 minutes, until wilted.
- 5 meanwhile, beat eggs, add garlic powder, pepper, pepper flakes and salt.
- 6 add cooked veggies.
- 7 spray pan.
- 8 pour into pan and with spatula scrape egg that runs back to veggie, to make a 4-5 inch patty.
- 9 cook 2-3 minutes until about half way cooked thru and flippable.
- 10 flip and cook another couple minutes.
- 11 while cooking egg patty, mix sauce ingredients in a microwaveable dish.
- 12 cook for about 10- 20 seconds at a time, until it forms a honey-like consistency.
- 13 add water or sugar of choice to reach desired consistency and desired mild sweetness.
- 14 top the cooked egg patty with sauce and enjoy.
