Rabri Malpua

Ingredients

  • Servings: 4
  • 2 cups milk
  • 1 cup flour
  • ghee (for frying)
  • 2 cups sugar
  • 1 cup water
  • saffron strand
  • 1 cup khoya
  • 1/4 cup cashews, chopped fine
  • 1 teaspoon sugar
  • 1/2 teaspoon cardamom powder
  • 1 teaspoon rose water
  • silver vark (for decoration)

Recipe

  • 1 bring milk to a boil.
  • 2 keep stirring till reduced to half the qty.
  • 3 cool.
  • 4 add flour.
  • 5 blend well to obtain batter of pouring consistency.
  • 6 add more milk, if needed.
  • 7 boil sugar and water together till the syrup reaches one thread consistency.
  • 8 add saffron.
  • 9 keep aside.
  • 10 grind the mawa, cashews, sugar, cardamom powder and rose water into a paste.
  • 11 heat ghee in a flat frying pan.
  • 12 pour a tbsp of the batter in the pan.
  • 13 fry till done.
  • 14 remove from ghee.
  • 15 similarly make more puas.
  • 16 dip these in the sugar syrup for a minute.
  • 17 put a tsp of the khoya, roll up to form a packet and place on platter.
  • 18 decorate with silver vark.
  • 19 serve.
