Layered Lebanese Salad

Ingredients

  • Servings: 12
  • 1 cup uncooked bulgar wheat
  • 1/3 cup fresh lemon juice
  • 1/3 cup vegetable broth or 1/3 cup chicken broth
  • 1/3 cup extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon fresh ground pepper
  • 2 cups finely chopped red onions
  • 5 cups chopped tomatoes (about 4 large tomatoes)
  • 1/2 cup chopped fresh parsley
  • 1/2 cup chopped fresh mint
  • 1/4 cup chopped fresh dill
  • 2 cups peeled peeled seeded and chopped cucumbers (about 2 medium cucumbers)
  • 1 -2 large red bell pepper, chopped

Recipe

  • 1 place bulgur in a large glass bowl. stir together lemon juice, broth,olive oil, garlic, salt and pepper; drizzle lemon juice mixture evenly over bulgur, and let stand 30 minutes at room temperature.
  • 2 layer onion and next 6 ingredients over bulgur mixture. cover and chill at least 24 hours or up to 48 hours.
