Cucumbers In Yoghurt

Ingredients
- Servings: 4
- 2 -3 cucumbers, peeled and chopped into small cubes
- 1 teaspoon salt
- 300 ml low-fat yogurt
- 1 teaspoon freshly crushed garlic
- 1 teaspoon vinegar
- pepper powder, as required
- 1 teaspoon fresh parsley or 1 teaspoon mint, chopped
Recipe
- 1 put cucumber cubes in a small bowl.
- 2 add salt and keep aside for 15 minutes.
- 3 strain the liquid into another bowl.
- 4 extract as much water as possible out of the cucumbers.
- 5 in a large bowl combine vinegar, yoghurt and garlic.
- 6 fold in the salted cucumber and pepper powder.
- 7 cover and chill until needed.
- 8 just prior to serving, sprinkle with mint or parsley.
- 9 serve with whole wheat bread or crackers.
- 10 enjoy!
