Cucumbers In Yoghurt

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 -3 cucumbers, peeled and chopped into small cubes
  • 1 teaspoon salt
  • 300 ml low-fat yogurt
  • 1 teaspoon freshly crushed garlic
  • 1 teaspoon vinegar
  • pepper powder, as required
  • 1 teaspoon fresh parsley or 1 teaspoon mint, chopped

Recipe

  • 1 put cucumber cubes in a small bowl.
  • 2 add salt and keep aside for 15 minutes.
  • 3 strain the liquid into another bowl.
  • 4 extract as much water as possible out of the cucumbers.
  • 5 in a large bowl combine vinegar, yoghurt and garlic.
  • 6 fold in the salted cucumber and pepper powder.
  • 7 cover and chill until needed.
  • 8 just prior to serving, sprinkle with mint or parsley.
  • 9 serve with whole wheat bread or crackers.
  • 10 enjoy!
