Minced Beef And Spinach Curry

Ingredients

  • Servings: 4
  • 500 g extra lean ground beef
  • 500 g frozen spinach
  • 1 large onion
  • 4 -5 garlic cloves
  • 1 scotch bonnet pepper
  • 1 (14 ounce) can chopped tomatoes
  • 1 tablespoon cinnamon
  • 2 teaspoons coriander seeds
  • 2 teaspoons cumin seeds
  • 1 tablespoon garam masala
  • 1 tablespoon olive oil

Recipe

  • 1 chop the onion and crush the garlic. slice the scotch bonnet into thin slivers and chop these finely.
  • 2 heat the oil in a deep-sided frying pan/skillet and cook the onions, garlic and pepper until soft. add the minced beef and brown off.
  • 3 place the balls of frozen spinach into the pan on top of the beef. cover and cook on a medium heat until spinach is softened. stir thoroughly.
  • 4 add the cinnamon, coriander, cumin and garam masala. stir thoroughly to blend in spices, then add the chopped tomato.
  • 5 increase heat and cook until the sauce reduces and thickens. add salt to taste.
