Hot Thai Mussels

Total Time: 40 mins Preparation Time: 25 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 1 lb mussels
  • 1/4 cup fresh basil leaf, chopped
  • 6 thai red chili peppers, finely chopped (or 2 jolokia peppers)
  • 4 garlic cloves, chopped
  • 1 teaspoon lemongrass, chopped
  • 1/8 teaspoon extra virgin olive oil
  • 1/2 cup green onion, chopped
  • 1/2 teaspoon fish sauce
  • 1/8 teaspoon sea salt
  • 1/2 cup water

Recipe

  • 1 clean and debeard mussels.
  • 2 cook mussels on hickory bbq until open.
  • 3 discard any unopened mussels.
  • 4 set aside cooked mussels.
  • 5 heat oil in saute pan.
  • 6 add onion and garlic to oil until golden.
  • 7 add lemongrass, fish sauce, water, salt and chile peppers.
  • 8 simmer for 5 minutes.
  • 9 add mussels and basil to mix.
  • 10 stir until hot and serve.
