Super Fast Pad Thai

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 7 ounces rice noodles
  • 5 ounces frozen peas
  • 7 ounces frozen shrimp
  • 2 tablespoons sunflower oil
  • 4 ounces bean sprouts
  • 4 scallions, sliced
  • 2 eggs, beaten
  • 3 tablespoons roasted peanuts
  • 2 tablespoons soy sauce
  • 2 tablespoons sweet chili sauce
  • 1 ounce cilantro, leaves only

Recipe

  • 1 bring a pan of water to the boil, add the noodles and cook for 3 mins, adding the peas and shrimp for the final minute. drain and set aside while you heat the oil in a large frying pan.
  • 2 fry the noodles, shrimp, peas, beansprouts and scallions, tossing to coat in the oil for a few minutes.
  • 3 push everything to one side of the pan and pour in the egg. stir until cooked, then mix everything well. toss through the peanuts, soy and sweet chili sauce so everything is combined.
  • 4 scatter with the cilantro leaves and serve.
