Rice Paper Rolls

Total Time: 20 mins Preparation Time: 20 mins

Ingredients

  • 12 rice paper sheets
  • 1 carrot, cut into ribbons
  • 1 red capsicum, cut into strips
  • 200 g shaved ham or 200 g smoked salmon
  • 1 avocado, sliced
  • 2 spring onions, cut into strips
  • 4 mushrooms, thinly sliced
  • sweet chili sauce, to dip
  • soy sauce, for dipping
  • thai barbecue sauce, for dipping

Recipe

  • 1 soak the rice paper for 30 seconds in warm water.
  • 2 arrange a selection of the listed ingredients in the centre of the paper.
  • 3 fold the edges over, then roll into a log.
  • 4 serve chilled, with a selection of dipping sauces.
