Savory 'n Light Mac 'n Cheese

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • 3 cups chicken or 3 cups vegetable stock
  • 2 cups dried orecchiette (or similar maccaroni product)
  • 2 tablespoons butter
  • 2 tablespoons butter, softened
  • 1 tablespoon olive oil
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon cracked red pepper
  • 3 garlic cloves, minced
  • 2 dashes onion powder
  • 1/4 cup shredded parmesan cheese (or gran padano)
  • 1/2 cup shredded fresh asiago cheese
  • 1 cup shredded provolone cheese
  • 1/2 tablespoon kosher salt

Recipe

  • 1 bring stock to a boil and add 2 tbsp butter and orecchiette. boil until tender but not soft.
  • 2 drain stock and reserve one cup. return pasta to pot and reduce heat to low.
  • 3 add herbs, remaining butter, oil, garlic and onion powder. stir until well mixed.
  • 4 slowly stir in cheese making sure to add a small amount of broth as needed to obtain a creamy consistency. this is a slow proess and can take up to 20 minutes.
  • 5 stir in salt and serve.
