Savory 'n Light Mac 'n Cheese

Ingredients
- 3 cups chicken or 3 cups vegetable stock
- 2 cups dried orecchiette (or similar maccaroni product)
- 2 tablespoons butter
- 2 tablespoons butter, softened
- 1 tablespoon olive oil
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1/4 teaspoon cracked red pepper
- 3 garlic cloves, minced
- 2 dashes onion powder
- 1/4 cup shredded parmesan cheese (or gran padano)
- 1/2 cup shredded fresh asiago cheese
- 1 cup shredded provolone cheese
- 1/2 tablespoon kosher salt
Recipe
- 1 bring stock to a boil and add 2 tbsp butter and orecchiette. boil until tender but not soft.
- 2 drain stock and reserve one cup. return pasta to pot and reduce heat to low.
- 3 add herbs, remaining butter, oil, garlic and onion powder. stir until well mixed.
- 4 slowly stir in cheese making sure to add a small amount of broth as needed to obtain a creamy consistency. this is a slow proess and can take up to 20 minutes.
- 5 stir in salt and serve.
