Rice With Ginger And Coriander

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • 1 cup water
  • 1 cup chicken stock
  • 1 cup rice
  • 2 teaspoons oil
  • 4 cloves garlic, crushed
  • 2 tablespoons fresh ginger, minced
  • 3 shallots, thinly sliced
  • 1/4 teaspoon chili pepper flakes
  • 3 tablespoons finely chopped coriander

Recipe

  • 1 heat water and stock in a medium saucepan over medium high heat.
  • 2 stir in rice and bring to boil.
  • 3 reduce heat to low.
  • 4 cover and simmer for 20- 25 minutes or until rice is tender and liquid is absorbed.
  • 5 while rice is cooking, heat oil in a wok over high heat and add garlic, ginger, shallots and chilli pepper.
  • 6 stir fry 30 seconds or until fragrant.
  • 7 remove from heat.
  • 8 fluff rice with a fork and stir into ginger mix, adding coriander.
