Korokke - Japanese Potato Croquettes

Total Time: 30 mins Preparation Time: 30 mins

Ingredients

  • 3 -4 cups leftover mashed potatoes
  • 1 cup corn
  • 1/2 cup flour
  • 1 egg, beaten
  • 1 cup panko breadcrumbs (japanese bread crumbs)
  • oil (for frying)

Recipe

  • 1 mix together mashed potatoes and corn.
  • 2 make into patties that are fat but flat.
  • 3 dip each pattie first in flour, then beaten egg, then panko.
  • 4 fry in hot oil.
  • 5 drain on paper towels.
  • 6 serve with tonkatsu sauce, or other asian sauce.
