Lamb With Three Onions

Ingredients

- 1/3 cup teriyaki sauce
- 3 garlic cloves, minced
- 3/4 lb lamb tenderloin
- 2 tablespoons peanut oil or 2 tablespoons vegetable oil, divided
- 1 small red onion, cut into thin slices
- 1 small yellow onion, cut into thin slices
- 1 teaspoon sugar
- 1 teaspoon cornstarch
- 2 green onions, cut into 1-inch pieces
Recipe
- 1 combine teriyaki sauce and garlic in a shallow bowl. cut lamb across the grain into 1/4-inch slices; cut each slice in half. toss lamb with teriyaki mixture. marinate at room temperature 15-20 minutes.
- 2 heat large skillet over medium-high heat. add 1 tablespoon oil; heat until hot. drain lamb; reserve marinade. stir-fry lamb 3 minutes or until no longer pink. remove and set aside.
- 3 heat remaining 1 tablespoon oil in skillet; add red and yellow onions. reduce heat to medium. cook 6-7 minutes until onions are softened, stirring occasionally. sprinkle with sugar; cook 1 minute more.
- 4 blend reserved marinade into cornstarch in cup until smooth. stir into skillet. stir-fry 1 minute or until sauce boils and thickens.
- 5 return lamb along with any accumulated juices to skillet; heat through. stir in greens onions and serve.
