Lao Stir Fried Clams

Ingredients

- 1 1/2 lbs clams, with shells
- 2 garlic cloves
- 2 hot chilies
- 1 tablespoon fish sauce
- 1 tablespoon sugar
- 1 tablespoon oyster sauce
- 1 tablespoon oil
- 10 basil leaves
- 1/4 cup water
Recipe
- 1 soak clams for two hours.
- 2 pound garlic and chillies with mortar and pestle.
- 3 heat oil in wok until hot, and add garlic and chillies and stir fry for a few min until golden brown.
- 4 add clams and stir fry for 3 minute.
- 5 add fish sauce, sugar, oyster sauce, water and stir fry for another 5 minute.
- 6 add basil leaves and serves.
