Lao Stir Fried Clams

Total Time: 40 mins Preparation Time: 30 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs clams, with shells
  • 2 garlic cloves
  • 2 hot chilies
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1 tablespoon oyster sauce
  • 1 tablespoon oil
  • 10 basil leaves
  • 1/4 cup water

Recipe

  • 1 soak clams for two hours.
  • 2 pound garlic and chillies with mortar and pestle.
  • 3 heat oil in wok until hot, and add garlic and chillies and stir fry for a few min until golden brown.
  • 4 add clams and stir fry for 3 minute.
  • 5 add fish sauce, sugar, oyster sauce, water and stir fry for another 5 minute.
  • 6 add basil leaves and serves.
