Okra Fry

Ingredients
- Servings: 4
- 1 kg okra
- 2 -3 tablespoons thick plain yogurt
- 2 tablespoons chickpea flour (besan)
- 1 tablespoon red chili pepper
- 1 tablespoon garam masala
- salt
- oil (for frying)
Recipe
- 1 wash and dry the okra.
- 2 cut of the stem.
- 3 shred the okra length-wise (4 shreds per okra minimum).
- 4 dry the shredded okra.
- 5 add all the other ingredients except oil and mix thoroughly.
- 6 note that the individual shreds should get coated by the mixture.
- 7 ensure that the coating is thick and is not running at all.
- 8 heat oil in a wok.
- 9 fry okra in hot oil in small batches.
- 10 fry till brown.
- 11 remove excess oil by draining on paper towel.
- 12 do not cover at all.
- 13 serve along with rest of the dishes in a flat salad or rice serving tray.
