Okra Fry

Ingredients

  • Servings: 4
  • 1 kg okra
  • 2 -3 tablespoons thick plain yogurt
  • 2 tablespoons chickpea flour (besan)
  • 1 tablespoon red chili pepper
  • 1 tablespoon garam masala
  • salt
  • oil (for frying)

Recipe

  • 1 wash and dry the okra.
  • 2 cut of the stem.
  • 3 shred the okra length-wise (4 shreds per okra minimum).
  • 4 dry the shredded okra.
  • 5 add all the other ingredients except oil and mix thoroughly.
  • 6 note that the individual shreds should get coated by the mixture.
  • 7 ensure that the coating is thick and is not running at all.
  • 8 heat oil in a wok.
  • 9 fry okra in hot oil in small batches.
  • 10 fry till brown.
  • 11 remove excess oil by draining on paper towel.
  • 12 do not cover at all.
  • 13 serve along with rest of the dishes in a flat salad or rice serving tray.
