N.y.c. Chicken Fried Rice

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1/2 tablespoon extra virgin olive oil (extra virgin olive oil)
  • 1 onion
  • 2 chicken breasts (cubed)
  • 2 tablespoons soy sauce
  • 2 carrots (diced)
  • 1 bell pepper (diced)
  • 2 stalks celery (chopped)
  • 6 cups cooked rice (varies on how much you want)
  • 2 eggs
  • 1/3 cup soy sauce

Recipe

  • 1 heat oil in a large skillet; add onion, saute until soft, add chicken & 2 table spoons soy sauce & stir fry for 5-6 minutes.
  • 2 stir carrots, celery & peppers to chicken and soy sauce mixture and stir fry 4-5 minutes then add rice; stir in eggs and 1/3 cup soy cause,
  • 3 heat and serve hot!
