N.y.c. Chicken Fried Rice

Ingredients
- 1/2 tablespoon extra virgin olive oil (extra virgin olive oil)
- 1 onion
- 2 chicken breasts (cubed)
- 2 tablespoons soy sauce
- 2 carrots (diced)
- 1 bell pepper (diced)
- 2 stalks celery (chopped)
- 6 cups cooked rice (varies on how much you want)
- 2 eggs
- 1/3 cup soy sauce
Recipe
- 1 heat oil in a large skillet; add onion, saute until soft, add chicken & 2 table spoons soy sauce & stir fry for 5-6 minutes.
- 2 stir carrots, celery & peppers to chicken and soy sauce mixture and stir fry 4-5 minutes then add rice; stir in eggs and 1/3 cup soy cause,
- 3 heat and serve hot!
