S/d.broccoli Stir Fried Salad

Ingredients

- 2 tablespoons butter
- 1 medium onion, finely sliced
- 3 garlic cloves, chopped
- 1 teaspoon chili powder
- 1/2 teaspoon turmeric
- 1/2 teaspoon ground cumin
- 1/2 cup coconut milk
- 1/2 cup water
- 8 ounces broccoli stems, finely chopped
- 2 tomatoes, chopped
- salt
Recipe
- 1 heat the butter in a pan and fry the onions and garlic till just coloured.
- 2 add the spices and cook for 1 minute.
- 3 add coconut milk and water bring to the boil.
- 4 add the broccoli and simmer for 5 minutes.
- 5 add the tomatoes and cook 2 minutes.
- 6 add salt to taste.
