Ingredients

- 1 cup long grain rice, cooked
- 1/2 cup cashews
- 1/2 cup pine nuts
- 1 onion, finely chopped
- 1 tablespoon olive oil
- 1 tablespoon asian seasoning (persian)
- 2 teaspoons barberries
- 1/2 cup green peas
- 1/4 cup carrot, finely diced
- 1 teaspoon dried spearmint
Recipe
- 1 spread rice in a shallow tray to dry for at least an hour.
- 2 in a dry pan, toast nuts until just browning.
- 3 heat oil in a pan and saute onion until just transparent, add remaining ingredients and stir well to prevent clumping.
