Persian Rice

Total Time: 12 mins Preparation Time: 2 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 cup long grain rice, cooked
  • 1/2 cup cashews
  • 1/2 cup pine nuts
  • 1 onion, finely chopped
  • 1 tablespoon olive oil
  • 1 tablespoon asian seasoning (persian)
  • 2 teaspoons barberries
  • 1/2 cup green peas
  • 1/4 cup carrot, finely diced
  • 1 teaspoon dried spearmint

Recipe

  • 1 spread rice in a shallow tray to dry for at least an hour.
  • 2 in a dry pan, toast nuts until just browning.
  • 3 heat oil in a pan and saute onion until just transparent, add remaining ingredients and stir well to prevent clumping.
